honey, I’m nuts for these breakfast bars

IMG_3647I stumbled across this recipe for honey nut bars while sitting at home, sick from work. Luckily, this was a sinch to make and I had most ingredients on hand, including leftover coconut milk from the chicken coconut curry soup I made last Sunday.

The original recipe called for macadamia nuts. I used peanuts instead because they are about three times cheaper. But you can swap the macadamia nuts back in if you prefer them or if you are on the paleo diet. Also, you can swap in coconut oil if you have dairy issues and need a butter alternative.

If you are looking for a tasty snack for work or school, I’d recommend the honey nut bars. They are much better than store-bought nut/yogurt bars because they aren’t overpoweringly sweet, nor filled with preservatives that leave a bitter aftertaste in your mouth.
